Step by Step Method
Step 1
Add water, bay leaves, allspice (in tea ball), salt, garlic, onion, and chicken in large stock pot.
Step 2
Cover with the lid.
Step 3
Bring to the boil.
Step 4
Let boil until chicken is cooked, about an hour. During cooking time,

Check to see if you need to add some water, as it will reduce as it boils.
Step 6
Remove the chicken when it's cooked.
Step 7
Debone and deskin and cut into bite-size pieces and set aside.
Step 8
Now, taste the broth, and adjust the salt to your liking.
Step 9
Add in the rice and let it cook for about 20 minutes.
Step 10
Simmer on low heat.
Step 11
Do not cover with the lid, as this sometimes, will make it boil over.
Step 12
After the 20 minutes, remove the pot from the heat.
Step 13
Remove allspice and bay leaves.
Step 14
Add chicken and let it sit for 15 minutes, the rice will finish cooking.
Step 15
Add lemon juice and vinegar to taste.
