Ingredients

The ingredients are:
  • 2 bay leaves
  • 10 whole allspice
  • 1 clove garlic , smashed
  • 1 cup onion finely diced
  • 3 pounds whole chicken
  • 1/2 teaspoon salt
  • 2 teaspoons chicken bouillon
  • 12 cups water
  • 7 ounces dry white rice (1 cup)
  • Garnish
  • 1 tablespoon lemon juice
  • 1 tablespoon vinegar

How to Make

  • Step 1: Add water, bay leaves, allspice (in tea ball), salt, garlic, onion, and chicken in large stock pot.

  • Step 2: Cover with the lid.

  • Step 3: Bring to the boil.

  • Step 4: Let boil until chicken is cooked, about an hour. During cooking time,

  • Step 5: Check to see if you need to add some water, as it will reduce as it boils.

  • Step 6: Remove the chicken when it's cooked.

  • Step 7: Debone and deskin and cut into bite-size pieces and set aside.

  • Step 8: Now, taste the broth, and adjust the salt to your liking.

  • Step 9: Add in the rice and let it cook for about 20 minutes.

  • Step 10: Simmer on low heat.

  • Step 11: Do not cover with the lid, as this sometimes, will make it boil over.

  • Step 12: After the 20 minutes, remove the pot from the heat.

  • Step 13: Remove allspice and bay leaves.

  • Step 14: Add chicken and let it sit for 15 minutes, the rice will finish cooking.

  • Step 15: Add lemon juice and vinegar to taste.
