Step 1: Add water, bay leaves, allspice (in tea ball), salt, garlic, onion, and chicken in large stock pot.
Step 2: Cover with the lid.
Step 3: Bring to the boil.
Step 4: Let boil until chicken is cooked, about an hour. During cooking time,

Step 6: Remove the chicken when it's cooked.
Step 7: Debone and deskin and cut into bite-size pieces and set aside.
Step 8: Now, taste the broth, and adjust the salt to your liking.
Step 9: Add in the rice and let it cook for about 20 minutes.
Step 10: Simmer on low heat.
Step 11: Do not cover with the lid, as this sometimes, will make it boil over.
Step 12: After the 20 minutes, remove the pot from the heat.
Step 13: Remove allspice and bay leaves.
Step 14: Add chicken and let it sit for 15 minutes, the rice will finish cooking.
Step 15: Add lemon juice and vinegar to taste.
