Step by Step Method

Step 1

Combine spices in small bowl.

Step 2

Rub mixture into chicken inside and out, making sure the spices are evenly distributed and rubbed into pores.

Step 3

Seal in a Ziplock bag and refrigerate for 24 hours.

Step 4

Stuff loosely with onion and celery and bake, uncovered for 4 hours at 250 degrees F, basting occasionally.

I rubbed the chicken with the spice mix then I vacuum packed and froze the chicken to bring along on a camping trip. I thawed it and followed the rest of the recipe accordingly, but roasting it over indirect heat on the BBQ. Boy oh boy this was delicious, it turned out so tender and juicy.
