Ingredients

The ingredients are:
  • 3 pound roasting chicken (whole)
  • Spices
  • 2 teaspoons salt
  • 1 teaspoon paprika
  • 3/4 teaspoon cayenne
  • 1/2 teaspoon thyme
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon white pepper
  • 1/4 teaspoon black pepper
  • 1 cup yellow onion, chopped fine
  • 1 rib celery, chopped fine

How to Make

  • Step 1: Combine spices in small bowl.

  • Step 2: Rub mixture into chicken inside and out, making sure the spices are evenly distributed and rubbed into pores.

  • Step 3: Seal in a Ziplock bag and refrigerate for 24 hours.

  • Step 4: Stuff loosely with onion and celery and bake, uncovered for 4 hours at 250 degrees F, basting occasionally.
