Step by Step Method

Step 1

Scoop out the seeds from the tomato halves leaving a 1/2 inch shell,if necessary cut a very thin slice off the bottom so the tomato will stand up straight -

Step 2

Combine the feta cheese and chopped artichoke and place 2 tablespoons in each cavity - broil 3-4 inches from heat source for 3 minutes

Step 3

Sprinkle on the bread crumbs mixed with butter, broil for a further 1-2 minutes or until browned

Delicious! I was making dinner and realized I had some tomatoes to use up, so ran to the computer and found this lovely recipe that I had everything for. I quickly threw them together as directed, only adding some garlic salt and fresh ground pepper to the panko, and they were the perfect addition to our chicken and broccoli dinner. Thanks for posting this easy yummy recipe!
