Step 1

Combine first 6 ingredients in a small bowl; stir with a whisk. Place salmon on a broiler pan coated with cooking spray; brush with half of the honey mixture. Broil 8 minutes or until fish flakes easily when tested with a fork, basting frequently with remaining honey mixture.

Oh my goodness, was this delicious or what? So easy to make and we absolutely loved the taste of the vermouth. Made this in my convection toaster oven, on the broil setting. After the salmon was done, I brushed the remaining marinade over the cooked salmon. So delicious! We make salmon a lot, and this will definitely be on our regular rotation of salmon recipes! We loved the combination of flavors in the sauce which made this salmon really yummy! Because the salmon had the skin in-tact, I first cooked it skin-side down in a cast iron skillet on my stove-top to sear it so it wouldn’t be soggy. Once the skin was charred enough is when I placed the skillet of fish under the broiler. Came out really tasty and perfectly done! Thank you, Teresa, for sharing! We used the amount of marinade but had about twice as much salmon (a bit over 1 1/2 pounds) which worked perfectly. I did opt for the wine instead of the vermouth but otherwise made as directed. Thanks for sharing!

Delicious salmon! It's super easy and quick, too. We loved the flavor from the honey, vermouth, and ginger combination. The broiling technique worked great. Although, I must admit to not watching mine very carefully and the top of the salmon ended up getting a bit black. Oops - my bad! But, the flavor was still in there and the inside of the salmon was done perfectly! I'm definitely trying this again but will be more watchful next time. Thank you!
