Step by Step Method

Step 1

Preheat oven to 350 degrees F.

Step 2

In a skillet add the olive oil and heat.

Add peppers and onions and sauté until softened.

Meanwhile, in a blender, combine cottage cheese, eggs, parsley and seasoning to taste.

Blend until smooth.

Add veggies to a Pam sprayed 9x13 casserole.

Mix in cheese.

Pour sauce over, mixing gently.

Step 10

Bake 45 minutes until eggs are set and lightly browned.

Step 11

Let set 5 minutes before cutting.
