Step by Step Method

Step 1

In a skillet over low heat, add the butter and then add the sweet potatoes, garlic, 1/4 teaspoon salt and the thyme and cook, covered, for 5 minutes, stirring occasionally. Stir in spinach, cook for a few more minutes or until wilted.

Step 2

With the back of a spoon, make 4 wells in the potato mixture and then break an egg in each well. Sprinkle eggs with pepper and 1/4 teaspoon salt and then cook, covered on medium low heat until egg sets but not totally hard (5-10 minutes).

What a delicious and uncomplicated dish. When I read 15 minutes cooking time I thought it was not going to be enough but I was wrong. The shredded sweet potatoes were totally cooked. I used rainbow chard instead of spinach because I have it growing in my garden right now. And I used fresh thyme. I will definitely make it again.

Yummy sweet potato and spinach hash breakfast! I cooked my shredded sweet potatoes quadruple the amount of time since I like my potatoes a bit crispy. I also added a bit more spinach. This was a really tasty breakfast meal. Thank you!

So good! Grating by hand was taking forever, so I minced most of the sweet potato. Used garlic-infused olive oil instead of butter. We loved this fantastic breakfast - would work well for any time of day!
