Step by Step Method

Step 1

Preheat the oven to 350 degrees Fahrenheit.

Line a glass 9×13 pan with parchment paper and spray it with nonstick spray heavily, it sticks.

Set aside.

In a large bowl, add onion, bacon, zucchini that you have squeezed dry, carrots, and cheese.

Stir to combine.

Add the flour, baking powder and stir again to coat the vegetables in the pan.

Set aside.

In a medium bowl, crack the eggs and season to taste.

Add oil and whisk until combined.

Add the egg mixture into the fillings.

Mix everything together until a batter is formed.

Pour the batter into the prepared pan and spread until even.

Put the pan in the oven and bake for 35 minutes.

The zucchini slice is done when the eggs are set.
