  • 2 tablespoons olive oil
  • 3 cups frozen broccoli, chopped
  • 1 cup red bell pepper, diced
  • 1 cup onion, diced
  • 12 ounces cauliflower, frozen, riced
  • 16 ounces cheddar cheese, shredded (2 cups)
  • Sauce
  • 16 ounces cottage cheese (2 cups)
  • 6 eggs
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/4 teaspoon turmeric
  • 1 tablespoon fresh parsley minced

How to Make

  • Step 1: Preheat oven to 350 degrees F.

  • Step 2: In a skillet add the olive oil and heat.

  • Step 3: Add peppers and onions and sauté until softened.

  • Step 4: Add broccoli and riced cauliflower and cook until warmed.

  • Step 5: Meanwhile, in a blender, combine cottage cheese, eggs, parsley and seasoning to taste.

  • Step 6: Blend until smooth.

  • Step 7: Add veggies to a Pam sprayed 9x13 casserole.

  • Step 8: Mix in cheese.

  • Step 9: Pour sauce over, mixing gently.

  • Step 10: Bake 45 minutes until eggs are set and lightly browned.

  • Step 11: Let set 5 minutes before cutting.
