Step 1: Preheat oven to 350 degrees F.
Step 2: In a skillet add the olive oil and heat.
Step 3: Add peppers and onions and sauté until softened.
Step 4: Add broccoli and riced cauliflower and cook until warmed.
Step 5: Meanwhile, in a blender, combine cottage cheese, eggs, parsley and seasoning to taste.
Step 6: Blend until smooth.
Step 7: Add veggies to a Pam sprayed 9x13 casserole.
Step 8: Mix in cheese.
Step 9: Pour sauce over, mixing gently.
Step 10: Bake 45 minutes until eggs are set and lightly browned.
Step 11: Let set 5 minutes before cutting.
