Step by Step Method

Step 1

Heat the oil in skillet,

Add onion and cook for eight minutes, until the onion is really soft and silky .

Add garlic, 2 green onions, rosemary, salt, pepper, oregano and chili flakes, and fry gently on a low heat.

Add the beans and tomatoes.

Simmer for 20 minutes.

Bowl up and add feta and green onion on top.

Season to taste.

Serve with sourdough bread toasted and buttered.
