The ingredients are:
  • 3 tablespoons olive oil
  • 1 cup onion, sliced
  • 3 green onions, minced
  • 2 garlic cloves, smashed
  • 1 teaspoon sea salt flakes
  • 1/4 teaspoon white pepper
  • 1 teaspoon dried oregano
  • 1/16 teaspoon dried rosemary, crushed
  • 1/16 teaspoon chili flakes
  • 15 ounces plum tomatoes (1 can)
  • 30 ounces butter beans, (2 cans, 15 ounces each)
  • 2 ounces feta cheese, crumbled, (1/3 cup)
  • 4 ounces sourdough bread, (4 slices)
  • 2 tablespoons butter

How to Make

  • Step 1: Heat the oil in skillet,

  • Step 2: Add onion and cook for eight minutes, until the onion is really soft and silky .

  • Step 3: Add garlic, 2 green onions, rosemary, salt, pepper, oregano and chili flakes, and fry gently on a low heat.

  • Step 4: Add the beans and tomatoes.

  • Step 5: Simmer for 20 minutes.

  • Step 6: Bowl up and add feta and green onion on top.

  • Step 7: Season to taste.

  • Step 8: Serve with sourdough bread toasted and buttered.
