"Someone at work gave me these to try and they are so good that I wanted to share them. You can whip them up and serve to company for breakfast/brunch, or bring them into work for brownie points with your co-workers. They are also great during the holidays for a special family breakfast. They travel well too so you can bring them to your families house for Christmas morning brunch already made and ready to eat, with just a quick warm up in the microwave. "

Step by Step Method
Step 1
Place 12 paper liners in a muffin pan, and spray with cooking spray.
Step 2
In a bowl, combine hash browns, butter, salt and pepper. Press hash brown mixture into the bottom and up the sides of the muffin cups.
Step 3
Bake at 400 degrees, for 12 minutes, or until lightly browned.
Step 4
Meanwhile, cook sausage according to package directions, then cut into 1/2 inch pieces. Divide sausage evenly among the muffin cups.
Step 5
Combine eggs, cheese and bell pepper. Pour over sausage, then sprinkle with chives/green onions.
Step 6
Bake for 13-15 minutes, or until set.
