"This recipe was part of a Realsimpledotcom email. Wikipedia describes basic Crème Anglaise better than I could & in fewer words ... "Crème anglaise (French for "English cream") is a light pouring custard used as a dessert cream or sauce" that is most often used to top bakery goods, fruits or ice cream. This recipe flavors it w/Brandy, but I also think a version flavored w/coffee crystals would be outstanding & I cannot wait to try that. (Prep time was hardly worthy of note since it just measures 3 ingredients & strains the yield, but I allowed 2 min. The cook time was given by the site.) ENJOY!"

Step by Step Method

Step 1

In a sml saucepan, bring the half-and-half just to a simmering boil. In a med bowl, whisk together the egg yolks & sugar. Whisking constantly, slowly add the hot half-and-half.

Step 2

Return the mixture to the saucepan & cook over med-low heat, stirring until the mixture lightly coats the back of a spoon (3- 5 min & do not boil). Remove from heat, stir in the brandy & strain. Serve warm or chilled as suggested in the intro or as your imagination suggests.
