Step 1: In a sml saucepan, bring the half-and-half just to a simmering boil. In a med bowl, whisk together the egg yolks & sugar. Whisking constantly, slowly add the hot half-and-half.
Step 2: Return the mixture to the saucepan & cook over med-low heat, stirring until the mixture lightly coats the back of a spoon (3- 5 min & do not boil). Remove from heat, stir in the brandy & strain. Serve warm or chilled as suggested in the intro or as your imagination suggests.
