"A traditional Ecuadorian breakfast or side dish. Bolon means large ball, and verde means green. So, these are large balls made of green plantains. Stuffed with cheese and fried. Sometimes they also include chicharron or chorizo. These are typically eaten with fried eggs and aji (hot sauce) and a strong cup of coffee!"

Step by Step Method
Step 1
Peel and chop the plantains into chunks. Place the plaintains in a pot and cover with water. Boil until soft, then drain and mash them. Season with salt to taste.
Step 2
Crumble the cheese and combine with the mashed plantains. Taste and adjust salt if necessary. Mold into balls the size of a small tomato.
Step 3
Heat the vegetable oil in a pan. Cook the plantain balls until they are golden brown on all sides. Remove from oil and place on a paper-towel lined plate
Step 4
Serve while hot, with a fried egg and aji on the side.
