Step 1: Peel and chop the plantains into chunks. Place the plaintains in a pot and cover with water. Boil until soft, then drain and mash them. Season with salt to taste.
Step 2: Crumble the cheese and combine with the mashed plantains. Taste and adjust salt if necessary. Mold into balls the size of a small tomato.
Step 3: Heat the vegetable oil in a pan. Cook the plantain balls until they are golden brown on all sides. Remove from oil and place on a paper-towel lined plate
Step 4: Serve while hot, with a fried egg and aji on the side.
