  • 2 1/2 pounds plantains (4 green plantains)
  • 3 1/4 ounces Queso Fresco cheese (3/4 cup)
  • 2 cups oil (vegetable oil)

How to Make

  • Step 1: Peel and chop the plantains into chunks. Place the plaintains in a pot and cover with water. Boil until soft, then drain and mash them. Season with salt to taste.

  • Step 2: Crumble the cheese and combine with the mashed plantains. Taste and adjust salt if necessary. Mold into balls the size of a small tomato.

  • Step 3: Heat the vegetable oil in a pan. Cook the plantain balls until they are golden brown on all sides. Remove from oil and place on a paper-towel lined plate

  • Step 4: Serve while hot, with a fried egg and aji on the side.
