"You won't be sorry if you try this great coleslaw variation from FoodNation w/Bobby Flay courtesy of the Pillars Restaurant. I usually give new recipes a "trial run", but served this the 1st time at a dinner party because I wanted something that would be better made a day ahead. The original recipe served 30, but I amended it slightly & reduced the quantities to be more family & small dinner party friendly. Enjoy!"

Step by Step Method

Step 1

Combine the 1st 8 ingredients, mix well & set aside.

Step 2

Prepare each veggie ingredient & add to a large bowl, mixing well after each new addition to ensure even distribution. Combine w/dressing & refrigerate overnight.

Step 3

Add blue cheese plus optional toppings (if using) just before serving & mix well.

Note: To enhance presentation, I topped it w/the crumbled bacon & pine nuts

I love all the ingredients in this coleslaw on their own, but I wasn't as enamored of the whole shebang as I had hoped. Don't get me wrong, it was still very good! I did use the bacon for garnish, btw.

This worked out well for us, but I have to warn you that the amounts were not strictly followed - I left DH in charge of making the dressing while I was not around (but all in all, his adjustments came out good). So...first he read teaspoon not tablespoon of celery seed, then decided to use 1/4 the mustard and salt and no sugar. When we assembled it all, it was really good, but the amount of cheese made it quite rich, so I added half a lemon to balance that out and then all was well (I think you could get away with half a cup of the cheese). The bacon and blue cheese give this coleslaw a great and different flavor. I definitely would not omit the bacon! We had this as our main veg at dinner (not for a potluck or BBQ), and we are big veggie eaters, so the servings came to be about half for us. Thank you for introducing us to this recipe!
