"I used a powdered sugar substitute when I made this parfait... you can use the real deal, if you prefer. Using raspberries or blackberries make this dessert a little lower in carbs. I always use fresh berries, so I don't know if frozen berries would work (but I imagine they would?)."

Step by Step Method

Step 1

In a mixing bowl, combine the softened cream cheese, powdered sugar substitute, vanilla extract, lemon zest, and fresh lemon juice. Beat with an electric mixer until smooth and creamy.

Step 2

Rinse and dry the mixed berries. If using strawberries, remove the stems and slice them into bite-sized pieces.

Step 3

In goblets or dessert glasses, layer the lemon cream cheese mixture, berries, and slivered almonds. Start with a dollop of the cream cheese mixture at the bottom, followed by a layer of berries, then repeat until the glasses are filled.

Step 4

Top each parfait with a sprinkle of slivered almonds and garnish with fresh mint leaves, if desired.

Step 5

Chill the parfaits in the refrigerator for at least 30 minutes to allow the flavors to combine and the cream cheese mixture to set slightly.
