How to Make

  • Step 1: In a mixing bowl, combine the softened cream cheese, powdered sugar substitute, vanilla extract, lemon zest, and fresh lemon juice. Beat with an electric mixer until smooth and creamy.

  • Step 2: Rinse and dry the mixed berries. If using strawberries, remove the stems and slice them into bite-sized pieces.

  • Step 3: In goblets or dessert glasses, layer the lemon cream cheese mixture, berries, and slivered almonds. Start with a dollop of the cream cheese mixture at the bottom, followed by a layer of berries, then repeat until the glasses are filled.

  • Step 4: Top each parfait with a sprinkle of slivered almonds and garnish with fresh mint leaves, if desired.

  • Step 5: Chill the parfaits in the refrigerator for at least 30 minutes to allow the flavors to combine and the cream cheese mixture to set slightly.
