" This salad is so attractive. Serve it on individual plates or arrange the leaves on a large platter. You can vary the filling to suit your taste. Add more spice, perhaps a dressing or another favorite salad ingredient. Avocados go well too! If you do not like anything too spicy use only 1 jalapeno pepper. You may make the filling ahead of time, cover, and refrigerate until you are ready to serve."

I cut the recipe in half and the hubby and I enjoyed them during one of our appy nights...I had some leftover endive from another recipe and stumbled upon this tasty recipe...I used a Roma tomato and a whole jalapeno...delicious...thanks for sharing your recipe...

My husband and I totally *Loved* this salad! A beautiful presentation and so tasty! I prepared the recipe as posted using ROMA tomatoes and added a about 1/2 avacado, diced. There was plenty of the salsa left over we just put it on saltines and enjoyed that way. Will definately make this, again! Thanks for sharing this recipe with the world.
