Step by Step Method

Step 1

Preheat oven to 400°.

Step 2

Scrub beets and trim tops.

Step 3

Wrap beets in foil; place on a baking sheet and bake until tender, 1-1/4 - 1-1/2 hours.

Step 4

Cool slightly. Peel beets and cut into cubes.

Step 5

Place remaining vegetables and parsley in a large bowl.

Step 6

Whisk together dressing ingredients; toss with cucumber mixture.

Step 7

Gently stir in beets.

I had friends over for dinner and served this with a pork roast. It was a fantastic side salad everyone really enjoyed. I did add a bit of warm honey to it to amp the sweetness a bit. You are right, it is delightful :-)
