Step by Step Method

Step 1

Mix all the ingredients and separate into six servings.

Step 2

Place each serving on double foil and seal the packets well.

Step 3

Place packets on the edge of the grill over medium heat.

Step 4

Cover grill and cook for apprx 30 minutes or until the potatoes are tender. Flip the packets once or twice.

Step 5

The potatoes may also be done in a regular oven. Put packets in 350 oven for 30 minutes.

I scaled back for 2 serves and they were very generous serves and I cooked in the oven at 175C and they took 50 minutes to cook but I did cut my potato slices slightly on the thicker side but the DS and I thoroughly enjoyed this easy to make no fuss side. Thank you Bergy made for billboard Recipe tag game.

Another Bergy winner! I love packets, they are super easy and always so flavorful as was this potato and pepper packet. I cut this back for two servings, only has snippits of the jalapeno pepper on hand enough to add a zing to the potatoes. Looking forward to serving to family and friends. It will be a great addition to our summer cookouts.

A really GOOD recipe. Very easy to prepare and alot more flavor than I thought it would have. I cooked this in the oven. And the left over packets reheat well. Will be making this again. Especially for those who love hot peppers!
