Step by Step Method

Step 1

Preheat oven to 350 degrees F.

Step 2

Line a cookie sheet with parchment paper.

Step 3

In a bowl combine the first 5 ingredients (-vanilla). In another bowl combine the dry ingredients (oats - baking soda). Stir dry mixture into the wet ingredients.

Step 4

Stir in dried cranberries (or other dried fruit).

Step 5

Using a 1/4 cup measure drop dough in mounds 3 inches apart on the prepared cookie sheet. Using a spatula dipped in water flatten the mounts so you have 2 1/2 inch round cookies which should be about 1/2 inch thick.

Step 6

Bake for 14-15 minutes or until cookies are brown and transfer to a wire rack and let cool.

Step 7

To store these can be frozen for up to 2 months or at room temperature for up to 3 days.
