"Recipe from an email from a kitchen wharehouse supplier - looks interesting and would like to try if I can get some bananas ripened enough and not have the DS throw them out on me (30 years with autism intellectual impairment), I just may get to make this recipe, in the mean time here for safe keeping. Step by Step Method

Step 1

Preheat oven to 175C fan forced (for conventional I would recommend about 185C).

Step 2

Grease and line (with baking paper) a standard loaf tin.

Step 3

Sift flour, bi-carbonate and baking powder together.

Step 4

Cream butter and sugar with a stand mixer or hand held mixer until well mixed.

Step 5

Add the egg and mashed banana and mix well together.

Step 6

Add the sifted flour and baking powder till incorporated and mix well and then add the 2 tablespoons milk and mix through.

Step 7

Add sifted flour and baking powder till incorporated.

Step 8

Pour mix into prepared loaf pan.

Step 9

Bake for 35 to 40 minutes, test with skewer for doneness (should come out clean).

Step 10

Would recommend to leave in pan for 5 to 10 minutes before turning out.

For being so low in fat, this is really moist. I made one change-I added 1 tsp. of vanilla extract.

Made exactly as written for the FYC Tag Game @ FF&F - This is excellent banana bread Pat .. Moist, full-flavored & the easiest fix of the genre that I've made. It will be served to our family tomorrow at the weekly brunch & I'm hoping to post another pic. Thx for sharing this tasty recipe w/us.

Very good banana bread/cake. We made mini loafs with this recipe and were able to make 3 mini loaves and one small (4 x 6) loaf. Very good bread/cake which we enjoyed! Thanks for sharing!
