Banana Cranberry Bread With Candied Ginger

"For the chopped candied ginger (crystallized ginger), (I use ginger "chips" which are pre-chopped and come in a bag. You can find them in upscale grocers or natural food stores)"

Preheat oven to 350F. Coat a 9 x 5 inch loaf pan with nonstick cooking spray.
Peel and mash banana in a medium mixing bowl.
Add egg, vanilla, oil, milk, yogurt and sugar and mix until combined.
In a large bowl, sift flour, spices, soda, baking powder and salt.
Stir wet mix into dry mix until just combined.
Stir in cranberries and ginger.
Pour batter into prepared pan and bake 1 hour, or until wooden pick inserted in center comes out clean.
Cool in pan 10 minutes and turn out onto wire rack to cool completely.
