  • 2 bananas (ripe)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/3 cup oil (vegetable oil not olive oil)
  • 1/4 cup milk
  • 1/4 cup plain yogurt
  • 3/4 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup fresh cranberries (coarsely chopped)
  • 1/4 cup candied ginger (chopped, see description)

How to Make

  • Step 1: Preheat oven to 350F. Coat a 9 x 5 inch loaf pan with nonstick cooking spray.

  • Step 2: Peel and mash banana in a medium mixing bowl.

  • Step 3: Add egg, vanilla, oil, milk, yogurt and sugar and mix until combined.

  • Step 4: In a large bowl, sift flour, spices, soda, baking powder and salt.

  • Step 5: Stir wet mix into dry mix until just combined.

  • Step 6: Stir in cranberries and ginger.

  • Step 7: Pour batter into prepared pan and bake 1 hour, or until wooden pick inserted in center comes out clean.

  • Step 8: Cool in pan 10 minutes and turn out onto wire rack to cool completely.
