"This recipe, from The Spunky Coconut, is so good, it's amazing! If you are gluten and dairy free, this is for you. There are a lot of ingredients, but this includes both the crust and filling. No cook time, except for the crust, unless you want to freeze it to help it set up."

Step by Step Method
Step 1
In a bowl, add the first six ingredients and mix well. Add the flours, baking soda and baking powder and mix again.
Step 2
Roll out the dough. Or simply pour the pie crust mixture into the dish and press it into place with your hands.
Step 3
Bake the crust at 350 degrees for about 12 to 14 minutes. Allow the crust to cool.
Step 4
In a food processor, add the filling ingredients. Puree till creamy and smooth. Add to cooled crust. Freeze for a couple of hours (if you want it to set up quickly), then store in the fridge.
