Ingredients

The ingredients are:
  • CRUST
  • 3 tablespoons flax seed meal (or 1.5 tablespoons chia seed meal)
  • 1/4 cup applesauce
  • 2 tablespoons applesauce
  • 1 tablespoon vinegar (apple cider vinegar)
  • 1/2 teaspoon stevia powder
  • 1 tablespoon honey
  • 1/4 cup coconut oil (melted)
  • 1 cup walnut meal flour (walnuts that have been pureed in the
  • Food processor OR almond meal flour)
  • 1/2 cup coconut flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • FILLING
  • 8 dates (pitted, soak first to soften if they are very dry or under 1/2 cup raw honey)
  • 3 bananas (peeled,ripe)
  • 2 teaspoons vanilla extract
  • 1/4 cup cocoa powder (plus 2 tablespoons)
  • 1/4 cup coconut oil (melted)
  • 1 1/2 teaspoons chia seed meal

How to Make

  • Step 1: In a bowl, add the first six ingredients and mix well. Add the flours, baking soda and baking powder and mix again.

  • Step 2: Roll out the dough. Or simply pour the pie crust mixture into the dish and press it into place with your hands.

  • Step 3: Bake the crust at 350 degrees for about 12 to 14 minutes. Allow the crust to cool.

  • Step 4: In a food processor, add the filling ingredients. Puree till creamy and smooth. Add to cooled crust. Freeze for a couple of hours (if you want it to set up quickly), then store in the fridge.
