Step 1
Preheat oven to 350f degrees.
Step 2
Cream butter and sugar in a large bowl or electric mixer on medium until light and fluffy; add the egg, vanilla and banana; beat until well mixed.
Step 3
Add the cinnamon, baking soda, salt and flour; beat until well combined, then stir in the cereal.
Step 4
Drop by tablespoon full, 2 inches apart on a cookie sheet lined with parchment paper and sprayed with veggie spray; bake for approximately 12 minutes.
Step 5
Remove to wire rack to cool
