  • 1 cup butter (or margarine) (I used crisco)
  • 1 cup brown sugar (I used splenda brown mix)
  • 1 egg, lightly beaten
  • 1 teaspoon vanilla
  • 1 cup banana, mashed
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups all purpose flour
  • 1 cup crunchy cereal (of your choice, granola is best)

How to Make

  • Step 1: Preheat oven to 350f degrees.

  • Step 2: Cream butter and sugar in a large bowl or electric mixer on medium until light and fluffy; add the egg, vanilla and banana; beat until well mixed.

  • Step 3: Add the cinnamon, baking soda, salt and flour; beat until well combined, then stir in the cereal.

  • Step 4: Drop by tablespoon full, 2 inches apart on a cookie sheet lined with parchment paper and sprayed with veggie spray; bake for approximately 12 minutes.

  • Step 5: Remove to wire rack to cool
