Step by Step Method
Step 1
Preheat oven to 350 F.
Step 2
In a medium bowl, beat butter with sugar and minced ginger.

Beat in the egg.
Step 4
Mix in mashed bananas and mix well. Whisk together flour, baking powder, baking soda, cinnamon and salt. Mix into the wet ingredients. Stir in the raisins or nute.
Step 5
Pour batter into a greased 8-inch loaf pan.
Step 6
Bake for 55 to 65 minutes or until a toothpick in the center comes out clean.

Allow to cool 10 minutes on a wire rack before removing from pan.
