Step by Step Method
Step 1
Sift flour before measuring.
Step 2
Resift with wheat germ, baking powder, and salt.
Step 3
Blend butter, sugar, and lemon rind until creamy.
Step 4
Beat in the eggs and banana pulp.
Step 5
Add the sifted ingredients in about 3 parts to the sugar mixture, beating the batter after each addition until smooth.
Step 6
Fold in the apricots.
Step 7
Place batter in greased 8½"x4½" loaf man.
Step 8
Bake in a preheated 350' F. oven about 1 hour or until done.
Step 9
Cool before serving.
