The ingredients are:
  • 1½ cups all-purpose flour
  • ¼ cup wheat germ
  • 2¼ teaspoons baking powder
  • ½ teaspoon salt
  • ⅓ cup butter
  • ⅔ cup sugar
  • ¾ teaspoon grated lemon rind
  • 2 eggs, beaten
  • 14 ounces ripe banana pulp (= 1¼ cup or 3 medium bananas)
  • ¼ cup apricots, finely chopped

How to Make

  • Step 1: Sift flour before measuring.

  • Step 2: Resift with wheat germ, baking powder, and salt.

  • Step 3: Blend butter, sugar, and lemon rind until creamy.

  • Step 4: Beat in the eggs and banana pulp.

  • Step 5: Add the sifted ingredients in about 3 parts to the sugar mixture, beating the batter after each addition until smooth.

  • Step 6: Fold in the apricots.

  • Step 7: Place batter in greased 8½"x4½" loaf man.

  • Step 8: Bake in a preheated 350' F. oven about 1 hour or until done.

  • Step 9: Cool before serving.
