Step 1

Grill/broil the bacon until crisp, then transfer to a plate lined with paper towel to drain.

Step 2

Combine the mayonnaise and mustard in a bowl.

Step 3

Toast the bread and spread with half the mayonnaise mixture.

Step 4

Divide the lettuce between 4 slices of bread and then add the bacon, tomato and avocado, drizzle with remaining mayonnaise, then top with the remaining bread securing with a cocktail stick or wrap in greaseproof paper.

Step 5

Serve the BALT with kettle chips warmed in the oven for 5 minutes if having.

I have gone crazy for avocados, so I really enjoyed this delicious sandwich. I had to use a "store-bought" tomato, since they are out of season here. Can't wait till I can have it with a wonderful fresh tomato! Made for FYC tag game.
