Step 1: Grill/broil the bacon until crisp, then transfer to a plate lined with paper towel to drain.
Step 2: Combine the mayonnaise and mustard in a bowl.
Step 3: Toast the bread and spread with half the mayonnaise mixture.
Step 4: Divide the lettuce between 4 slices of bread and then add the bacon, tomato and avocado, drizzle with remaining mayonnaise, then top with the remaining bread securing with a cocktail stick or wrap in greaseproof paper.
Step 5: Serve the BALT with kettle chips warmed in the oven for 5 minutes if having.
