"This is a quick and flavorful dressing that we saw prepared at the CIA at Greystone, California in the late 1990s. They used it to dress delicate mixed salad greens and served it in a crispy Parmesan bowl. We use it on a variety of greens and vegetables. It has a higher ratio of vinegar to oil than traditional vinaigrette (which we prefer)."

Step by Step Method

Step 1

In a small bowl combine vinegar and seasonings.

Refrigerate any unused vinaigrette. Return to room temperature to serve.
