Step by Step Method

Step 1

Preheat oven to 425 degrees F.

Step 2

Spray a 9 x 13 inch baking dish with Pam.

Step 3

Sprinkle cheese on bottom of dish; top with chilies.

Step 4

In a large cup or bowl combine milk, baking mix and eggs and beat until smooth. Pour over the cheeses in the baking dish. Top with 1/4 cup salsa.

Step 5

Bake for 25-30 minutes or until puffed and golden. Cool for 10 minutes before cutting into squares.

Step 6

Serve with the sour cream guacamole and salsa.

What tasty little squares...I cut the recipe in half and they came out so yummy...they are like little Mexican flavored quiches...I even had some warmed up for my breakfast...I omitted the guacamole because we really don't care for it...made for "FYC" tag game...
