"My whole family loved this chicken so I'm posting it here. I had to double the dry mix because there was not enough chicken and mix for my whole family to eat and I made 12 thighs. If you want you can add your favorite spices instead of the ones I have on the recipe"

Step by Step Method

Step 1

Place the dry mix into a large plastic bag. shake the bag until everthing is well mixed.

Step 2

Beat eggs in a shallow dish or bowl.

Step 3

Coat one chicken piece in egg, then place in bag with crumb mixture. Hold the bag closed with your hands then shake until the chicken piece is coated. Place on a rack, then repeet until all pieces are coated.

Step 4

Heat oil in a large skillet. (just about 1-inch of oil).

Step 5

Cook the chicken on each side until only just light browned. (a few minutes on each side only). Move the chicken to a large greased baking pan.

Step 6

Bake 350f (preheated) for 40 minutes.

This is a good basic recipe to use for chicken. I added garlic powder, onion powder, and sage. It was very flavorful. I liked the texture of the coating from the potato flakes. It was yummy!
