Ingredients

The ingredients are:
  • 8 chicken thighs (you could by the ones with bones removed, I like to leave on the bones)
  • 2 eggs (beaten)
  • FOR THE SEASONING MIX
  • 36 saltine crackers (crushed, one box)
  • 2 tablespoons all-purpose flour
  • 1/4 cup dry potato flakes (you could use flavored flakes that you can by in store)
  • 1 tablespoon granulated garlic powder
  • 1 teaspoons paprika
  • 2 teaspoon salt (Lawry's season salt)
  • 1 teaspoon ground black pepper

How to Make

  • Step 1: Place the dry mix into a large plastic bag. shake the bag until everthing is well mixed.

  • Step 2: Beat eggs in a shallow dish or bowl.

  • Step 3: Coat one chicken piece in egg, then place in bag with crumb mixture. Hold the bag closed with your hands then shake until the chicken piece is coated. Place on a rack, then repeet until all pieces are coated.

  • Step 4: Heat oil in a large skillet. (just about 1-inch of oil).

  • Step 5: Cook the chicken on each side until only just light browned. (a few minutes on each side only). Move the chicken to a large greased baking pan.

  • Step 6: Bake 350f (preheated) for 40 minutes.
