"I found this originally as a Passover spinach dish, but I liked it so much that I eat it year-round. If using it for Passover, substitute matzo meal for the bread crumbs. I use the microwave to heat the spinach, about 4.5 minutes per 10 ounce box package...then use the back of a spoon to press out the water in a colander."

Step 1

Preheat oven to 350 degrees.

Step 2

Place hot/drained spinach in a medium size bowl. Add cream cheese and sour cream and blend well.

Step 3

Stir in bread crumbs (or matzo meal) and seasonings.

Step 4

Add beaten eggs and mix until eggs are incorporated.

Step 5

Pour into a 8 inch square baking dish coated in cooking spray.

Step 6

Bake for 45 minutes.
