"I found this originally as a Passover spinach dish, but I liked it so much that I eat it year-round. If using it for Passover, substitute matzo meal for the bread crumbs. I use the microwave to heat the spinach, about 4.5 minutes per 10 ounce box package...then use the back of a spoon to press out the water in a colander."
Preheat oven to 350 degrees.
Place hot/drained spinach in a medium size bowl. Add cream cheese and sour cream and blend well.
Stir in bread crumbs (or matzo meal) and seasonings.
Add beaten eggs and mix until eggs are incorporated.
Pour into a 8 inch square baking dish coated in cooking spray.
Bake for 45 minutes.

Nice flavors that was enjoyed aside chicken tonight. The cream cheese and sour cream give it a nice taste in this recipe. The only thing I will do different next time is not drain as much liquid out of the cooked spinach so that it could add more creaminess, otherwise will make as directed.
