"From a cookbook titled Let the Kids Cook which was distributed by a local supermarket in a showbag and the local Royal Agricultural Show. Times are estimated. UPDATE - have since made this twice each time using 2 drumsticks with an approximate weight of 350 grams, the first time I did not slash them and they took 55 minutes to bake, the second time I slashed them and they took 40 minutes to cook but had a lot more flavour which had permeated the meat more than the first time."

Step by Step Method

Step 1

Slash each drumstick in 3 places with a sharp knife (this will help the marinade to get into the flesh and speed up cooking time - if you don't want to slash the drumsticks allow 35 to 45 minutes to cook.)

Step 2

In a bowl combine all the ingredients and work the marinade into the drumstick meat.

Step 3

Lay the drumsticks out in a single layer in a shallow pan or on a baking tray, leaving a little space between each if possible and pour over any excess marinade.

Step 4

Bake at 180C for 20 to 30 minutes or until golden brown and bubbling (time will depend on size of drumsticks, I usually find it takes about 45 minutes most times).

Step 5

Serve with coleslaw.

Very good chicken which we enjoyed. The changes I made was using less chicken than the recipe called for and using tomato paste instead of tomato sauce, otherwise it was made as directed. I did cook the chicken for about 40 minutes or so. Thanks for sharing!
