Step by Step Method

Step 1

Preheat oven to 450F degrees.

Step 2

Pound chicken breasts lightly so they are of an even thickness.

Step 3

Pour olive oil into a 13" x 9" baking dish.

Step 4

Lightly dredge the chicken through to coat it, then place chicken breast side by side in the dish.

Step 5

In a small bowl, whisk together salt, pepper, garlic powder, onion powder and chilli powder and sprinkle the seasoning mixture over bother sides of the chicken and rub it in with your hands and place the chicken breasts side by side, making sure there is no overlap.

Step 6

Bake in a preheated oven for 15 to 20 minutes, until juices are clear or a meat thermometer reads 160-170F degrees - NOTE depending on the size of your chicken breasts, it could take longer, the time was worked on the chicken being less than an inch thick.

Step 7

Cover with foil and allow to rest for 5 to 10 minutes while the juices settle before slicing.

Step 8

Serve hot.

Made chicken breasts to go along with a salad for a quick lunch today and it was PERFECT with my greens. I followed as directed, except I didn't pound out the chicken. I just baked it a little longer than instructed. Easy, versatile recipe. Thanks for sharing!

The breasts are so tender and juicy! I doubled the spice mix & amount of chicken. Used Ancho chile powder which provided a wee bit of heat. Did not pound the breasts (as it makes me feel queasy) so left them whole and used a meat thermometer to make sure they were all cooked through. Definitely will be keeping this fast and easy recipe.
