Step 1

Heat oil in a small frypan or saucepan; add the bacon bits and red onion; cook 3 or 4 minutes to crisp up.

Step 2

Add carrot ribbons, brussel sprouts, salt and pepper; cook over medium heat for 6 or 8 minutes until carrot has softened.

Step 3

Just before serving garnish with roasted sunflower seeds.

Lovely combination of the flavours and textures! Love the addition of the carrots & sunflower seeds. I left the sprouts whole as they were tiny. Sorry I was hurried and forgot the sunflower seeds for the photo. I did add them before serving. Made for Billboard Recipe Tag.
