"When my mom moved to a senior community, she got rid of a ton of things, including her 1973 Bacardi Party Book. While most of the promotional recipe book is about rum and drinks, there are some food recipes included for parties or cooking with Bacardi rum. The original recipe was called Chicken Cut-Ups, and used a 3 lb chicken fryer, cut up. That's the only change I made to the recipe."

Step by Step Method

Step 1

Preheat oven to 350 degrees.

Step 2

Combine all ingredients except chicken and optional orange slices.

Step 3

Brush chicken parts generously. Arrange chicken skin side up and with an orange slice on each piece (optional) in a shallow baking pan, basting occasionally with remaining mixture.

Step 4

Bake 1 hour or until golden brown and tender.

Very good, and so easy. I used the orange slices but removed them the last 10 minutes so the chicken would brown more.
