  • 1/4 cup melted butter
  • 1/4 cup orange juice
  • 1/4 cup rum (Bacardi light rum)
  • 1/2 teaspoon grated orange rind
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground ginger
  • 1/8 teaspoon pepper
  • 1 garlic clove, crushed
  • 3 pounds chicken (parts or cut up fryer, skin on)
  • 1 whole orange (sliced, optional)

How to Make

  • Step 1: Preheat oven to 350 degrees.

  • Step 2: Combine all ingredients except chicken and optional orange slices.

  • Step 4: Bake 1 hour or until golden brown and tender.
