Step by Step Method
Step 1
Heat the oil in a large frying pan, then fry the bacon and onion together for 10 minutes until the bacon is golden.
Step 2
With a slotted spoon, remove the bacon and onion from the pan. Add the potatoes to the pan and fry for 10 minutes or until golden.
Step 3
Add the caraway and paprika, season well with salt and pepper to taste, then fry for another minute, stirring to release their fragrance.
Step 4
Return the bacon and onion to the pan, taste for seasoning, then add the parsley.
Step 5
Serve hot and - for a real authentic touch - with a fried egg on top.
