Ingredients

The ingredients are:
  • 1 1/2 tablespoons oil (canola oil)
  • 14 ounces smoked bacon (lardons, or cooked ham)
  • 8 ounce yellow onion (1 onion, cut into chunks)
  • 1 pound potatoes, cooked (preferably waxy ones, cold and cut into small chunks)
  • 1 teaspoon caraway seeds
  • 1 1/2 teaspoons paprika (hot, sweet paprika)
  • 1 tablespoon flat-leaf parsley, chopped

How to Make

  • Step 1: Heat the oil in a large frying pan, then fry the bacon and onion together for 10 minutes until the bacon is golden.

  • Step 2: With a slotted spoon, remove the bacon and onion from the pan. Add the potatoes to the pan and fry for 10 minutes or until golden.

  • Step 3: Add the caraway and paprika, season well with salt and pepper to taste, then fry for another minute, stirring to release their fragrance.

  • Step 4: Return the bacon and onion to the pan, taste for seasoning, then add the parsley.

  • Step 5: Serve hot and - for a real authentic touch - with a fried egg on top.
