Step by Step Method

Step 1

Set a skillet over a medium heat and cook the bacon crisp.

Step 2

Remove to paper towels and wipe the skillet out.

Step 3

Mix the mascarpone with the grated mozzarella, onion powder, cayenne, salt and pepper.

Step 4

Spread the mascarpone mixture over two of the slices of bread.

Step 5

Top with 1/2 the spinach, shrimp and cooked bacon on each sandwich.

Step 6

Add the provolone and the other slice of bread.

Step 7

Spread the top of each sandwich with 1/2 of the mayonnaise.

Step 8

(Saving half for the other side)

Step 9

Heat your oil in the skillet and carefully place the sandwiches mayonnaise side down in skillet.

Step 10

Brush the remaining mayonnaise over the remaining sandwich tops.

Step 11

Cook the sandwiches until the bottom golden brown, about 3 minutes.

Step 12

Carefully flip sandwiches.

Step 13

Cook for a further 3 minutes until the second side is golden brown and the cheese has melted.

Step 14

Cut in half.
